Scrambled Tofu & Toast

Scrambled TofuINGREDIENTS
– Organic Tofu
– 1/4 tsp. Salt (add more to taste, if needed)
– 1/4 tsp. Paprika
– 1/4 tsp. Garlic Powder
– 1/4 tsp. Onion Powder
– 1/4 tsp. Dill
– 1/4 tsp. Tumeric
– 1/4 tsp. Oregano
– 1/4 tsp. Basil
– 1/4 tsp. Chipotle Seasoning
– 1/4 tsp. Black Pepper

COOKING DIRECTIONS
Drain tofu from its watery packaging. Add oil to a skillet and heat on a medium heat. When the oil is hot, add the block of tofu to the pan (CAUTION: be careful of oil spatter; the oil may pop out of the pan). Mash tofu block with a fork until crumbled. Cook for 5 to 6 minutes. Then stir the tofu to keep it from sticking to the pan and/or burning. Cook for an additional 5 minutes. Then stir again, add herbs and spices.Cook for an additional 3-5 minutes or until the tofu browns to your desire. When done, remove from heat. Toast your favorite bread (I used Trader Joe’s Three Seed and Honey – delicious!), butter it if you like and top it with the tofu. Bon Appetite!
